An inexpensive southern staple, straight from my mom’s kitchen! Here’s what you’ll need:
- 1 can of salmon (Double Q is my favorite.)
- 1/4 cup of flour
- 1/4 cup of corn meal
- 1 egg
- 1 tablespoon of mayo
- 2 slices finely chopped onion (optional)
- 1 tsp black pepper

Drain and debone salmon. Add rest of ingredients and mix together. Heat cooking oil in large skillet. Form salmon mixture into patties, brown on each side. Remove from skillet and place on a plate with two paper towels underneath.
I serve this with homemade macaroni and cheese and LeSeur small green peas.
