Breakfast Bake for Days

I pledge to never subject you to endless scrolling when you just want a recipe.

You will need:

  • 1/2 cup milk
  • A dozen eggs
  • Shredded or crumbled cheese
  • 2 roma or several cherry tomatoes
  • One bunch of scallions
  • Breakfast sausage (I like sage the best.)
  • Salt and pepper

First brown your sausage in a skillet and drain. Set aside.

Preheat oven to 350 degrees. Grease a 9×13 Pyrex dish.

Crack eggs into large bowl. Whisk and add milk, a teaspoon of salt, a teaspoon of pepper, and a heaping cup of cheese. Feta is my go-to.

Slice and dice your tomatoes. Chop your scallions. Add these along with your breakfast sausage to the bowl and stir. If you want to add more veggies like spinach and mushrooms, that is your prerogative, but you may need a couple extra eggs to balance out the consistency.

Pour the contents of the bowl into your baking dish, cover with aluminum foil and bake for 30 minutes. Remove aluminum foil and bake for 10 more minutes.

That’s it, that’s all you do. I cut mine into squares as I am serving and then refrigerate the leftovers. My husband and daughter both love it and will eat it until it’s gone.
